Vegeterian Stuffed Eggplants

Imam bayildi, an important and well know clasicall turkish food,meal. It is very popular in Turkey, and you must to taste this food in your lfie. in this post i will give you this recipes.
2 lb small eggplant
1 lb onion, chopped thinly
4-6 green chilies, chopped
7 cloves of garlic, thinly sliced
1 lb tomato, diced
1 tablespoon sugar
1/2 bunch parsley
3/4 cup olive oil

Fisrt Heat 190°C
Slice each aubergine in half lengthwise
Blanch the aubergine shells in boiling water for 2 minutes
Heat 3 tbsp of oil in a pan and saute the onion until soft and golden
Add crushed garlic and fry for 2 minutes
Add parsley, chopped aubergine, tomatoes, green and red pepper, salt and black pepper and cook for 5 minutes then add lemon juice and sugar.
after arrange the aubergine boats in a baking dish and fill each one with the filling
Cover it with aluminum foil and bake in oven for 25 minutes

Turkish Kofte - (izmir köfte)

350 g mince
a tin chopped tomatoes
1 bunch parsley
2 cloves of garlic

1 egg

Kofte is sould be very small and main principle is to mix the mince with an egg, bread, an onion, the chopped parsley and the spices and then bake. It is also possible to breadcrumb the small meatballs or to fill them with cheese. Other variations are the “ladies’ thigh” - larger Köfte with a cheese and rice filling, mostly breadcrumbed. Finally add a garlic&yoghurt sauce and serve with a baguette. Good Apettide.

4 glasses of meat broth · 1 glass tarhana · 250 gr. yoghurt · 2 tablespoons margarine · 1 tablespoon unsalted tomato paste · Salt · Red pepper · Peppermint
process: Put the margarine and the ground meat in a saucepan and fry the meat well then add the tomato paste and salt and mix until the tomato paste blends afterthat pour in 4 glasses of meat broth and bring to the boil.

then put 1 glass of meat broth into a bowl with the tarhana and melt tarhana by mixing slowly later, add some yoghurt by mixing. so, pour this mixture into the saucepan slowly and stir constantly. 10 minutes of stirring later , the soup will get thicker and fry small bread cubes in a knob of butter, sprinkle with red pepper optionally, pour a pinch of peppermint over the soup as a last and serve with the soup , if you want with butter.. Fresh soup for your family. Good apettite...

Ingredients 2 medium tomatoes, cubed1/2 cup olive oil1/ 2 pound ground beef or lamb2 cups of rice1 medium cabbage, leaves boiled in water6 cloves of garlic, chopped2 long green pepper, chopped1/3 cup chopped parsley1 tsp red pepper paste

Directions 1)Boil the cabbage leaves in water for 20-25 minutes.
2)then mix all other ingredients.
3)take one cabbage leaf, put about 1-2 tbs of rice mix in the middle fold 1/2 inch of two longer side edges towards the middle than roll the cabbage up.
4)In a shallow large saucepan place the stuffed cabbages, folding the loose edge under.
5)pour hot water with salt and pepper, enough to cover all stuffed cabbages
