Helva recipe

Turkish helva is very old dessert. Well know lots of people . Very delicious and yummy food.

1 1/2 cups water
1 1/2 cups molasses
1 1/2 cup unsalted butter
2 cups all-purpose flour
1/4 cup chopped walnuts

Firstly bring water and molasses to a boil in a saucepan. Secondly melt the butter in a separate saucepan over very low heat and stir in the flour and cook, stirring occasionally, for a few minutes until the dough begins to pull away from the sides of the pan. Thirdly pour the molasses mixture into the flour, stirring to form a ball. then fold in chopped walnuts. Lastly drop onto waxed paper by the spoonful, and allow to cool completely before serving. Store in an airtight container.

Turkish Asure Recipe

Asure is an interesting taste that i have ever, very tradational sweet, popular in turkish people because in some cities neighbours cook asure to send it all friends and neighbours. It'is observance.

sugar, corn starch, wheat, orange peel, raisin, apricot, fig, currant, apple, chick peas, beans, rice, hazelnut, almond, cinnamon, salt, orange and vanilla favours.

Firstly boil the wheat in the pressure cooker between 1 hour to one hour and a half that may depending on the wheat offcourse. It will take much much longer if u boil using normal pan..pressure cooker is the easiest way Secondly add in the milk into the already boiled n softened wheat.
Add in the rice paste then add in sugar and add in water
Add in the chick peas n the white dried beans
Stir everything till they reach to the consistency of an asure (approximately half an hour or so)
12 minutes before u turn off the heat, add in the raisin n the apricot
5 minutes before u turn off the heat then add in the dried fig

suggestion : if you desired you can cook your asure with a mixture of 1 glass of milk and 3 glasses of water. For decorating you can use pomegranate kernels, peeled almonds, walnuts, peanuts, for stuffing and cinnamon. You can also serve warm.

Turkish Peasant Soup

Ezogelin soup. very delicious another turkish soup which is well known. This soup can be found 90 % of restaurants in turkey. peasant soupe recipes:
6 Tb. Sp. Red Lentils
2 Tb. Sp. Cracked Wheat
2 Tb. Sp. Rice (plump kind)
3/4 lb. Onion
3/4 lb. Tomato
1 1/2 Tb. Sp. Dry Mint
Salt and Red Hot Pepper to taste
3 Tb. Sp. Butter

For preparing first pick and wash red lentils. Second put red lentils, cracked wheat and rice in a pot. Cover with water at least 4" above them. Gently boil covered until red lentils melt. About 2 hours. Add hot water if needed. In the mean time, grate onion and tomato. Melt butter and fry onions and tomatoes on a medium heat until onions are very light brown and well mixed with tomatoes. Add salt and red pepper for ezogelin soup.

When the soup is cooked , add onion mixture, stir well and continue cooking another 30 minutes on a low heat covered. Stir occasionally. Turn off the heat. Mix dry mint then stir well and serve.
