first : Peel onions and garlic, wash. Cut onions into half second slice into 1-2 mm thick slices. Crush garlics. Slice pared carrots into 1 cm thick pieces. Saute; onion in olive oil in a covered sauce- pan for 4-5 minutes. LAter add water, garlic, salt and sugar and boil. Add carrots. Sprinkle with rice. Cover and simmer for 25-30 minutes, or until tender. lastly remove from heat, place in a serving plate serve cold

2 tbsp water or milk and salt

directions:

-Put flour in a bowl and break eggs into the bowl then mix well then add water or milk, whichever you want, and mix again.
-Add parsley, feta, black pepper, and pepper flakes to this mix and mix them all. (Since feta was already very salty, I didn’t add salt).
-lastly heat oil in a frying pan. Add either one scoop at a time for small rounds or the whole mix for a big one. When one side is cooked, flip it over.

Red Lentil Soup recipe

Ingredients:
1 cup red lentil, washed and cleaned
4 cups vegetable stock
1/4 cup mild onion, finely chopped
1/2 cup white potato, peeled and diced

Firstly place the red lentils in a colandar and rinse. Sift through to remove and debris or damaged beans. Secondly place the washed and cleaned lentils into a medium pot with the stock, potatoes, onions and paprika. Bring the pot to a boil and reduce to a simmer. Loosely place a lid on the pot leaving slightly ajar as to allow some evaporation. Cook for 40-40 minutes until the lentils are tender. Add salt and pepper to taste. then place all but 1 cup of the soup into a blender or food processor and blend briefly. Return blended soup to the pot with the reserved cup of soup. Heat through.

Ingredients:
1 large tomato
1 each cucumber
1 small onion
1 tablespoon dill weed fresh
1 x salt
2 each green chili peppers chopped
1 tablespoon vinegar

Directions: Cut tomatoes into 10 wedges.Pare the cucumber; cut it in half lengthwise and then in thin slices. Cut onion in half lengthwise and then slice paper thin. Rinse and pat dry.On a platter, arrange in succession rows of tomatoes,cucumber slices and onion pieces. Sprinkle with the dill, salt and chili pepper.Mix vinegar.

* 6 Cups Chicken Stock
* 1 1/2 Cups Rice
* 2 Tablespoons Unsalted Butter
* 1 Pound Chicken Breast — Chopped
* 2 Medium Eggs

Directions: Bring stock, rice and butter to a boil. Reduce heat, cover and simmer for 20 minutes. Add chicken. Simmer for 10 minutes. Blend eggs with lemon juice and then slowly stir in 1 cup hot stock. Add this into the soup. Simmer for 5 minutes. Season with salt. Do not allow soup to boil after adding eggs, it may break or curdle

1 1/2 Large Onions -- chopped
1 Tablespoon Olive Oil
7 1/2 Ounces Chickpeas
1 1/2 Cloves Garlic
1 Large Tomatoes -- chopped
1 1/4 Tablespoons Tomato Paste
Salt And Pepper -- to taste

Directions Saute onions chickpeas and garlic utnil garlic turns brown. Add sliced potatoes. Cook until they start to brown. Add tomatoes, salt & pepper, paste and enough water to cover. Boil, reduce heat, cover and simmer 30 minutes. May be served warm or cold.

Turkish Wedding Soup

Turkish Wedding Soup :
1 Pound Red Lentils
4 Tablespoons Butter
2 Large Onion -- chopped
4 Cloves Garlic -- finely chopped
1/2 Teaspoon Cayenne
1 Teaspoon Paprika
1 Teaspoon Coriander
2 Cups Tomatoes -- chopped
2 Tablespoons Tomato Paste
Salt -- to taste
1 Tablespoon Lemon Juice
1 Teaspoon Dried Mint
Directions saute onion, garlic with cayenne and coriander in butter until onions are soft. add lentil and 8 cups of water. cook until lentils are soft according to package directions. halfway through cooking process add tomatoes and tomato paste. shortly before serving add lemon juice and bring to boil. add mint. cook for 10 more minutes.

1 lb. filo leaves (about 24 sheets) or phyllo pastry
16 tbsp. butter, melted
2-1/2 cups walnuts or almonds, chopped

for syrup:
2 cups sugar
1/2 cup water
1 tbsp. lemon juice
Directions: first brush a 9 x 12 inch dish with melted butter. Second fold a sheet of filo in half and carefully lay in the pan. Third brush with melted butter then repeat until there are 6 layers of filo. Sprinkle 1/3 of the nuts on the last layer. Add 6 more filo leaves, brushing each one with melted butter. Add 1/3 more nuts. Repeat this procedure until all ingredients are used ending with a pastry layer. Brush the top layer with butter and cut into diamond shapes 2 inches wide. Bake in a preheated 350 F. oven for 30 minutes. Reduce the heat to 300 and continue baking for 30 minutes longer.

syrup: firstly add the sugar to the water. secondly add lemon juice and boil the syrup for 5 minutes. Pour over the warm pastry and let cool before serving.

Feta Cheese Stuffed Eggplants

ingredients:
3/4 lb. Feta Cheese crumbled with a fork
5 stems Flat Parsley leaves chopped
1/2 t. Sp. Black Pepper
1 Egg, large

1 1/2 lb. Eggplant, one large
For coating
4 Eggs, large and 5 Sp. Flour
1 Cup Oil (Sunflower or Canola) for frying

First mix feta cheese, parsley leaves, black pepper and one egg to make the stuffing. Then beat eggs and flour lightly to make the coating batter. Cut eggplant in circles or diagonals to 1/5" (1/2 cm.) thick slices with every two slice joined at one side. Stuff eggplants with cheese mixture and press two slices with your palms to make the cheese stick to the eggplant. When all the eggplant slices are stuffed, heat one cup oil in a frying pan. Dip eggplants in the batter, coat well. Fry 3-4 at a time until both sides are golden brown. Take to a plate lined with couple of layers of paper towel to drain excess oil. Lastly serve warm.

Sutlac recipe

Sutlac is basic turkish dessert. Very popular among all of milky deserts because its easy to cook and very delicious to eat. Another big advantage from other classical desserts, sutlac is very light dessert because of low calorie value per 100 gr. amount.

Igredients:
150 gr uncooked grain rice
350 ml cold water
190 gr sugar
650 ml milk
a few drops of vanilla essence or vanillin sugar

first wash rice and place in saucepan with cold water then simmer it about 15-20 minutes until very soft and totally cooked. Second mix the milk, sugar and vanilla and place them in another saucepan and whisk and cook it at medium heat until start to thick.
-When it start to thick ,add your cooked rice and simmer and whisk it about 10 minutes. Then share it to your serving plates and leave to cool. you may put them in refrigator when it reach room temperature. So colder is better for me.
