150 gr. grated yellow cheese

Springs of "yufka" (philo dough)


Cut tomato, green pepper and parsley into thin slices. Add grated yellow cheese and pastrami than mix them together. Divide yufka into 4 pieces. Put the mixture on it and roll each of them than fry them until golden brown on both sides. Drain well.

Warm Beetroot with yoghurt recipe


600 g fresh raw beetroot
sea salt and black pepper
a squeeze of lemon
2 tbsps extra virgin olive oil
2 tbsps chopped flat leaf parsley
1 tbsp chopped fresh mint
1 egg
1 tbsp cornflour
500 g yoghurt


Wash the beetroot carefully. Place in a saucepan of cold water and bring to the boil.Boil for between 30 minutes and 1½ hours depending on the size of the beetroot- they will be ready when you can slip a sharp knife easily in to the centre.

Drain, place under a cold running tap and rum awawy the skin with your fingers. Cut the beetroot into 2 cm rounds, then dress with the lemon juice, olive oil, half the partsley, the mint and some salt and pepper.

In a large bowl whisk the egg with the cornflour until a smooth paste is formed, then add the yoghurt.Place the yoghurt in a saucepan and put over a medium heat to warm through, stirring occassionally.

Remove from the heat just before it bubbles. Add the beetroot and stir over the heat again until warm. Check the seasoning and serve sprinkled with the remaining parsley.

2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2/3 c. shortening
1 c. sugar
2 tbsp. instant coffee
3 eggs
2/3 c. milk
1 tsp. vanilla
1 c. chopped pecans or walnuts

Sift the flour, baking powder and salt into a bowl. In a second bowl, cream the shortening with the sugar and instant coffee. Beat in eggs until light and fluffy. Add the flour mixture alternately with the milk and vanilla. Add nuts. Spoon into greased loaf pan (or two small pans), bake 55 minutes at 350 degrees or until cake tester in the center comes out clean.

400g doner kebab slices
Cayenne pepper
2 rounds of pide bread
4 large chili peppers
50g tomato puree
2 large tomatoes
500g yogurt
4 large cloves of garlic
50g butter
salt to taste


1. Warm the pide by placing on a barbecue grill and keep warm. When all other ingredients are prepared, slice the pide into 3cm squares, divide into 4 portions and place as a layer on each plate.
2. Crush the garlic and add to the yogurt, mix well adding a little salt to taste. Spoon onto the pide squares just before adding the doner kebab slices.
3. Heat the doner kebab quickly taking care not to allow the strips to become too dry.
4. Cut the tomatoes in half and grill slowly until hot, do not allow to overcook
5. Grill the green chillies taking care not to burn, again do not allow to overcook
6. Mix the tomato puree with the olive oil and cayenne pepper and heat in a small pan on the grill. Add salt to taste.

Corn Salad

First boil the dried ickers in a pressure cooker then slice the onions into half circles, secondly slice just the green sides of the green onion.

Then dice the red bell pepper and put the boiled ickers, diced red bell pepper, green onion and onion into a bowl.

After that add canned tuna fish, crushed red pepper and salt on it. Mix all the ingredients gently, without mashing them during the mixing.

Its recipe below: first roast the ground meat with oil, add grated onion, finely sliced long green peppers and tomato paste on it, cook well. Place the bay leaves on top and pour over the olive oil and add sliced peeled lemon.

4 cups cooked wild rice
1 cup diced celery
2 green onions, sliced thin
1 1/2 cups fruit (dried, fresh, frozen or canned)
3 tablespoons vegetable oil
3 tablespoons vinegar
1/4 tsp black pepper
1/2 teaspoon salt (optional)
1. Toss all ingredients together in a large bowl.
2. Refrigerate salad for at least an hour before serving so flavors blend.
3. Bake in a medium-sized, covered casserole dish at 350 degrees F. until
steaming hot, about 45 minutes. Or, heat on low in a covered skillet until
steaming hot.
4. Refrigerate leftovers within 2-3 hours.
Tip: Choose canned mandarin oranges or pineapple, chopped apples or

this is another delicious taste .. nice and easy to prepare food:
1 lb. Dry beans (Soaked in water overnight)
7 1/2 oz Chicken breast
3 tablespoons margarin or butter
2 medium size onions (chopped)
2 medium size tomatoes (chopped)
1 tablespoon salt
3 cups chicken stock

Preparation :
Cut the chicken breast in cubes. Boil the beans for 30 minutes. Drain the water and let it cool. In a deep sauce pan melt the butter. Saute the chicken breast for 5 minutes, then add chopped onions. Saute the onions for another 5 minutes with chicken, then add the chopped tomatoes and continue sauteing until tomatoes are soft. Add the salt and the chicken stock to the saute pan. Boil everything for about 15 minutes. Transfer everything with the cooled beans to a casserole dish. Bake in a preheated oven until the beans are soft. 350F for about 1 to 1 1/2 hours. Serve with rice.

1 large onion.
30 gibsons (small onios)
20 small fresh potatoes

Preparation :
Cut the goose into sections. Put into a saucepan with enough water to cover and boil. Strain and set the goose aside. Chop the onion and tomatoes. Pell the gibsons. Peel the potatoes and fry in 2 tablespoons of butter. Put the goose and onions in the saucepan. Add 2 tablespoons of butter and saute, constantly stirring untill the onions turn golden. Sift some flour into the saucepan and fry the goose over a moderate heat. Put the tomatoes and a glass of stock into a saucepan and boil, then simmer lightly. Add the tomatoes and stock to the goose with the gibsons. Season to taste. Stew and check occasionaly with a fork. Add the potatoes 2-3 minutes berfore cooking is over.

1 young turkey
1 glass of water
5 tablespoons of margarine
1 big carrot
2 medium onions
3 cloves of garlic

Preparation :
Choose a good quality, quick roasting bird. Peel the onions and carrot, and cut them into 4 pieces each.

Put the Turkey in a pan with the onios, carrot, margarine, peeled garlic and water. Cover and put on heat. When the water starts boiling, remove the pan from heat and put in a hot oven. Some time later, turn the turkey over and cook until it becomes tender. When the turkey is tender remove the cover. Baste the turkey occasionaly.

When cooked, take the turkey out of the oven, put in on a serving dish and separate the different sections (breasts, legs, wings etc.) Puree the sauce remaining in the saucepan and serve the roasted turkey either topped with the sauce, or serve the sauce separately.

Add lemon juice to the mixture until its taste becomes sour. Add the red pepper and salt. Mix the salad well so that it is liked mashed potatoes. Put the salad into a serving dish and add a dressing of olive oil and red pepper before serving.

Mix the sesame oil and lemon juice well in a bowl. Add the walnuts and the garlic to the bowl and continue blending. Chop the parsley and add it to the bowl. Your tarator is now ready for serving. Serve in a deep dish. (If tarator is going to be served as a garnish, the amount of parsley may be reduced to half a bunch or omitted altogether.)

* 3 tablespoons vinegar
* 4 tablespoons olive oil
* 6 small ice cubes
* 1 teaspoon salt

Peel and dice the cucumbers. Put the cucumners in a bowl. Pound the garlic cloves in a mortar with 1 teaspoon of salt. While whipping the yoghurt with a fork or whisk, pour in 1/2 glass of water gradually and mix with yoghurt. Add the cucumbers and garlic to the yoghurt abd mix again. Put the olive oil, vinegar and ice cubes into the bowl. Decorate the salad with chopped fresh mint leaves or dried mint.

* 2 kg. bulgur (boiled and pounded wheat)
* 250 gr. bread yeast
* 1/2 kg. granulated sugar
Clean the stalks and stones from the bulgur, wash several times and cook in plenty of water until it becomes a mush. Remove from heat, cover with a piece of cloth to keep warm and let it stand overnight. Strain the mush which is almost solidified through the strainer. In another bowl dissolve the bread yeast in warm water, strain and add to the bulgur. Add the sugar and put in a glass jar or glazed pan, close to lid tightly. Once in a while stir with a scoop. After 3-4 days a not too sour boza will be obtained.
Put the boza in glasses, sprinkle cinnamon over and serve along with roasted yellow chick peas (leblebi).

Put in moderately hot oven to bake for 30 minutes. Make sure that the tops do not brown too much. Place biscuits on serving plate, frost with icing sugar and serve when cool.

PASTRY: Heat the margarine in a saucepan, add the water and salt and bring to the boil. Reduce heat and add the flour at once. Stir the mixture constantly for 7 minutes with a wooden spoon. Remove from the hit and set aside to cool. When cool, add the eggs and egg yolk and knead or 10 minutes. Take walnut sized pieces of the pastry and form into finger shapes with hands wetted with olive oil. Put shaped pastry into a pan containing warm olive oil and fry over a low heat until it puffs up a bit. Turning the heat up to moderate, continue frying until golden. Remove pastry with a perforated spoon, straining out, the oil out and put into the syrup. 15 minutes later, take vezir's fingers out of the syrup. Place on serving dish and serve.

Semolina helva recipe is my one of favorite is known as Irmik Helvasi in turkish

* 2 glasses thick semolina
* 3/4 glass margarine
* 1 3/4 glasses granulated sugar
* 3 1/2 glasses milk
* 1/8 glass pine nuts

Melt the margarine in a pan, add the pine nuts and semolina, and saute over heat a little less than moderate for 40-50 minutes while continuously stirring until the colour of the pine nuts changes. Add the milk and stir well, add the sugar and continue to stir. Cover the pan and cook over low heat for 20 minutes. Remove the pan from heat, allow to cool for half an hour, stir the helva thoroughly with a spoon, put a plate and serve.

Put the sugar, water and lemon juice into a saucepan, and after melting the sugar by stirring, allow it to boil until moderately thick. Set aside to cool.
PASTRY: Heat the margarine in a saucepan, add the water and salt and bring to the boil. Reduce heat and add the flour at once. Stir the mixture constantly with a wooden spool and continue until mixture leaves the sides of the pan and forms a ball. This should take 6 minutes, then remove pan from heat and set aside to cool. When cool, add the eggs and knead for approximately 10 minutes, using a pastry bag with a large nozzle, put 7-8 pastries in a pan containing the heated olive oil. Start frying the pastry over low heat, increase heat when pastry puffs up a bit and fry until golden. Remove fried pastry with a perforated spoon, draining away the oil, the put into the syrup. Strain off the syrup, place tulumba on serving plate and serve cool.

Tel Kadayif with walnuts recipe

Tel Kadayif with walnuts recipe.
* 750 gr. tel kadayif (pastry made into thin long thread-like strips; available at Turkish stores)
* 1 1/2 glasses of margarine
* 2 glasses of walnuts


* 4 1/2 glasses granulated sugar
* 3 3/4 glasses water
* 1 teaspoons lemon juice

Flake kadayif and place on a shallow cake pan, sprinkle crushed walnuts over evenly and spread the other half of the kadayif on top. Sprinkle melted margarine over and place in moderate oven to bake for 40 minutes.
SYRUP: Meanwhile, put the granulated sugar, the water and lemon juice into a saucepan and boil until moderately thick. When golden brown, take kadayif out of oven and sprinkle boiling syrup over immediately. Cover and allow to cool. When cool, place a plate large enough over the top of the pan and transfer kadayif onto the plate by turningit upside down.

  • 1 glass flour
  • 1/4 glass water
  • 2 eggs
  • 1/5 tablespoon salt
  • 1 teaspoon olive oil
  • 1 1/3 glasses starch
  • 1 glass melted margarine
  • 1 1/2 glasses ground walnuts
  • 2 glasses granulated sugar
  • 2 glasses water
  • 2 teaspoons lemon juice
Prepare the dough according to the dough for the baklava recipe. Place the dough pieces on each other on a woodwn board. Cut these pieces according to the size of the tray where they will be cooked. Grease the tray lightly and place one layer of dough over. Pour 1/2 tablespoon melted margarine evenly over the dough. Place only half of the pieces of dough on the tray so that there is one layer of dough, and margarine over that. When half of the dough is used up, sprinkle ground walnuts over. Over the walnuts place another layer of dough, spread some margarine, then another layer of dough, continue until all the pieces of dough are used. Cut the pieces of dough into the shape of baklava, place in a moderately heated oven and cook for an hour until the colour of the baklavas turn golden brown. Put granulated sugar, water and lemon juice into a pan, melt the sugar over moderate heat and boil for about 15 minutes until the mixture becomes a syrup. 1 medium celeriac
1 large carrot
1 large onion
5 cloves garlic
1/2 tablespoon sugar
16 glasses of water
1/2 bunch parsley

turkish recipes: firstly soak the beans overnight in cold water. Drain and put into pan containing 12 glasses of boiling water. Lower the heat a little and coook for 30 minutes until the color of the beans changes. Remove from the heat and drain. Put olive oil and chopped onions into a pan and saute. Scrape the carrot amd slice in circles 1/2 inch thick. Add the carrot, the potato cut into small pieces, celeriac, garlic, sugar, 1/2 tablespoon of salt and the beans. Pour 4 glasses of water over, close the lid of the pan and cook over heat little less than moderate until tender. Remove from heat, place on a plate after they have cooled down, sprinkle chopped parsley over and serve.

Turkish Adana Soup

Adana soup is very tradational.. turkish recipes and foods
5 glasses of meat broth
150 gr. ground meat
50 gr. chick peas
1 large tomato or 1 tablespoon
salt-free tomato paste
2 tablespoons vinegar
2 tablespoons thyme
1 tablespoon salt black pepper

Soak the chick peas in water overnight and boil them next morning. If you are going to use a tomato in the soup, peel and grate the tomato. Put the chick peas, the meat broth, the grated tomato or the tomato paste and 1/2 teaspoon of salt into the saucepan and boil. Add 1/2 teaspoon of salt and black pepper to the ground meat and knead it. Make small meatballs of almost hazelnut size and put them in the boiling soup. Let soup simmer for 20 minutes more. Remove saucepan from heat, add vinegar and, if desired, thyme, and stir before serving.

red lentil soup recipe from Turkey

1 glass red lentils
4 glasses of broth
1 glass water
1 tablespoon flour
1 onion
1 tablespoon margarine
4 slices of white bread
3 tablespoons margarine
2 egg yolks
1 glass of milk
salt to taste
Chop the onion, put into a saucepan with 1 tablespoon of margarine and saute. When onion is semi-sauteed add the flour and mix well. Wash the lentils, chop the carrot and put them in the saucepan. Pour the broth and water into the saucepan, add salt as desired and cook the soup for 30 minutes until the lentils are pasty. Strain the soup and pour it back into the same saucepan. Bring to the boil. Meanwhile blend egg yolks with milk well in a bowl and mix this into the soup. Remove saucepan from heat after 2 minutes. The soup is now ready to be served.
Cut 4 slices of white bread into cubes. Fry bread in a pan with 2 tablespoons of margarine. Drain off the margarine and put the bread cubes (croutons) on the soup.

Turkish dawn soup recipe:
500 gr. tomatoes
4 glasses of meat broth
2 tablespoons flour
2 tablespoons margarine
4 egg yolks
1 glass of milk
salt to taste

Preparation :
Firstly put margarine and flour into a saucepan and place saucepan on heat. Then saute flour until it becomes golden. Laterly peel the tomatoes and chop them. Put tomatoes, the broth and salt into the saucepan. Almost 35 minutes later, when the tomatoes are cooked, pour the soup into another saucepan straining it at the same time. Bring to the boil. Blend the yolks of aggs together with the milk in a bowl. Lastly add this mixture to the saucepan and serve the soup.

fish soup is very special and delicious . i like it very much. recipe:
1000 gr. flesh fish
2 small celeriac
1 onion
4 carrots
4 big potatoes
1 bunch of parsley
2 eggs
12 glasses of water
1/5 glass lemon juice
1/2 glass rice
salt and black pepper to taste

Cut the fins off the fish and scrape off the scales. Remove the gills and the gut. Wash the fish thorougly under running water. Grate the onion. Chop the parsley. Scrape and grate the carrots. Cut the peeled celeriac and potatoes into small pieces. Wash the rice. Then put the fish in a wide saucepan, put the grated onion and chopped parsley on top of it, and add salt as desired. Pour the water into the saucepan and place it over a moderate heat. Boil the fish until it becomes tender. Take fish out of the saucepan with a skimmer and put aside. Put the carrots and potatoes into the saucepan. Add the rice to the saucepan and let it boil until the soup becomes somewhat jelly-like. In the meantime take the skin and bones off the cooked fish and cut the fish into big pieces. When the vegetables and rice are thorougly cooked, strain them and put them in a seperate saucepan. Heat the saucepan containing the soup and add salt if necessary. When the jelly-like soup begins to boil, put the fish into the saucepan and let it simmer for 5 minutes.

Lastly whip the lemon juice and eggs in a bowl. Take spoonfuls of the soup and add it to this sauce while stirring constantly. When the bowl is full, pour it back into the saucepan while stirring the soup. Remove saucepan from heat, pour it into a serving bowl, add some black pepper according to taste and serve.

Preparation : frstly wash the rice and put it into a saucepan with the margarine, salt and the meat broth. Secndly place the saucepan on heat. Put one of the tomatoes aside and grate the rest. Then add the grated tomatoes to the saucepan. Peel the remaining tomato and cube. Put the tomato in a saucepan and let the soup cook for 15 more minutes until the rice softens. 1/2 pound of dry garbanzo beans, soaked overnight
sesame paste
3 fresh garlic
1 pepperocini and brine from jar
1 lemon Juice
cumin, corriander, salt, chilis, etc. to taste

Firstly take the garbanzo beans and soak them overnight then boil them for about 35–40 minutes after that strain them and put aside. Secondly in a food processor or blender add about enoutht water and all the remaining ingredients, pureing them until they make a thick paste. Put a couple of tablespoons aside to use for plating at the end.

Lastly taste the hummus and if it's too thick add some water, pepperocini brine, or lemon juice. bone appettide..

Sprinkle with sugar. Let stand for 4-5 hours until pumpkin is juicy. Cover and simmer for 1 hour or until tender. Remove from heat; cool. Arrange on a serving plate. Sprinkle with crushed walnuts. Cook over very low heat for 1 minute or until sugar is dissolved. Remove from heat. Stir in rose water. Pour into individual dessert bowls or cups. Cool and sprinkle with currants, chopped hazelnuts and pomegranates seeds. Serve chilled.

Hummus is a delicious appetizer and easy recipe. 1 can chickpeas (540 ml), washed, peeled
3 garlic cloves, smashed with salt
1 1/2 lemon juice
3/4 cup tahini (sesame paste)
2 tsp cumin
100 ml water
Salt for taste
2 tbsp sunflower oil
1 tsp red pepper
1 tbsp pine nuts, lightly roasted
