Kemalpasa Dessert

 Ingredients

100g semolina
2 glasses of water
400g sugar
1 teaspoon baking powder
2 eggs 50g butter
150g cheese curd

  1. Boil water and sugar to obtain a syrup and leave it. 
  2. Grate the cheese and knead with the other ingredients to obtain a dough. 
  3. Take small pieces of the dough, flatten them slightly and place on an oiled tray. 
  4. Bake in a 180 degree oven for 20-30 minutes until they turn slightly golden. 
  5. Boil the cookies in the syrup for 15 minutes. 
  6. Then serve cold.

Pumpkin Dessert Recipe

Ingredients

Pumpkin 1/4 medium size - 1700 gr
Sugar 2 3/4 cup - 500 gr
Walnuts (chopped) 1 cup - 100 gr

  1. Cut pumpkin into quarters. 
  2. Remove seeds and stringy interior. 
  3. Pare and cut into 5-6x2 1/2 cm (2-2 1/2 inch) slices 1-1 1/2 cm (0.5-3/4 inch) thick. 
  4. Place in a covered shallow pan. 
  5. Sprinkle with sugar. 
  6. Let stand for 4-5 hours until pumpkin is juicy. 
  7. Cover and simmer for 1 hour or until tender. 
  8. Remove from heat; cool. Arrange on a serving plate. 
  9. Sprinkle with crushed walnuts. 
  10. Serve at room temparature.

Noah's Pudding (Asure) recipe

In Turkey this desser is very special and traditional one. It is  legendary dessert because it called noah pudding.  Very delicious taste that you should try.

Ingredients:
1 cup unhulled wheat
1/2 cup dried chickpeas
1/2 cup dried navy beans
1 grated apple
1 cup sugar
1/4 cup each: raisins, dried apricots, dried figs
walnuts, hazelnuts,
pomegranate seeds

Directions:
Firstly boil wheat 20 minutes then drain, wrap in towel, and let sit overnight. Later separately soak chickpeas and beans overnight. Next day  boil the beans and peas and in a separate pot, simmer wheat in enough water to cover the grains.

Secondly when soft, manually mash wheat into paste without draining water then add apple, drained beans and peas. After that stir in sugar and dried fruit. Simmer 30 minutes more.

Lastly consistency should be like thick soup. Spoon into bowls, refrigerate. Pudding gels as it chills. Top with walnuts, hazelnuts.

Pumpkin Nut Bread recipe

This recipe is a good source of Vitamin A. Delicious, it is not turkish recipes but good.
Ingredients:
2 cups cooked, mashed pumpkin or 1 16-ounce can pumpkin
4 medium or large eggs
2 cups sugar
2/3 cup vegetable oil
2/3 cup water
3 1/3 cup flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 tablespoon cinnamon
1 cup each raisins (or other dried fruit) and chopped nuts

Directions: 1. Preheat oven to 350 degrees F.
2. Oil and flour two 9 x 5 loaf pans.
3. Mix pumpkin, eggs, sugar, oil, and water in medium bowl.
4. Mix dry ingredients in a separate bowl. Add raisins and nuts to flour
mixture. Add pumpkin mixture to flour mixture. Stir just until mixed.
5. Add half the mixture to each loaf pan. Bake for about an hour, or until a
knife inserted in center comes out clean.
6. After the bread has cooled for about 15 minutes, it should come out of
the pan easily. When completely cool, wrap bread in plastic.

Turkish Leeks in Olive Oil

2 lbs leeks
1/3 cup extra virgin olive oil
2 carrots (halved and sliced)
2 tbsps rice(uncooked)
2 tsps sugar
1/2 tsp salt
1 lemon juice
11 cups water


1- Trim leeks and remove a few of the outer layers.
2- Slice 3/4" thick, discard tough green leaves.
3- Wash leeks well in several changes of water.
4- In a heavy skillet, heat olive oil.
5- Stir in leeks and carrots.
6- Cover and cook very gently for 30 minutes, shaking the skillet occasionally.
7- Blend in the remaining ingredients in order.
8- Cover, simmer for another 30 minutes, checking the liquid,adding more water
9- When fully cooked, it should be very moist but not watery

meat and onion

Ingredients

500 g diced lamb
30 small onions
1 tablespoon tomato paste
2 tomatoes
2 tablespoons butter
salt
cumin
water

Instructions

Firstly place butter in pan. Secondly add diced lamb. Brown meat, allowing all juices to evaporate. Add tomato paste and stir through for two minutes. Add peeled and chopped tomatoes. Cook until tomatoes soften. Add 250 ml water, salt, stir, cover and cook for a further five minutes. Add peeled whole onions, stir and cover. Simmer until meat and onions are cooked. Before serving add a sprinkling of cumin powder.
